Peanut Butter Apple Muffins

  • 3/4 cup whole wheat flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 3/4 cup creamy peanut butter
  • 1/2 cup margarine, room temperature
  • 1/2 cup white sugar
  • 1 tsp. vanilla extract
  • 2 eggs
  • 3/4 cup unsweetened applesauce
  • 1 1/4 cups oats
  • 1/4 cup toasted wheat germ
  • 1/4 cup skim milk

Peanut Butter Apple Muffins
In a small bowl, stir together the flour, baking soda, and salt; set aside. In large mixing bowl, beat together the peanut butter and margarine until fluffy. Add in sugar and vanilla. Beat in eggs, one at a time, mixing well after each. Add applesauce and milk. Stir in flour mixture, then the oats and wheat germ just until moistened; don't overmix. Spoon batter in 12 lightly greased (or sprayed) muffin cups. Bake at 350 for 15-20 minutes. Gently remove muffins from pan to cool completely on wire rack. Store in an airtight container - but do not expect them to last long!

Yield: 12 Muffins
