"Honest to Gosh" Georgia Peanut Muffins

  • 1 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon hot sauce
  • 2 eggs
  • 1 cup finely chopped Vidalia onions
  • 1/2 cup butter melted
  • 1 1/2 cups dry roasted peanuts, chopped


In a large bowl, combine flour sugar, baking powder and salt. In another bowl, beat eggs, onions, hot sauce and butter until blended. Stir together until best moistened. Fold in peanuts. Fill twelve large or three dozen mini-muffin cups and bake at 400° for 10-12 minutes until they test done.

*Other sweet onions can be used if our Vidalia's are not available. Serve these with a typical southern meal.
