Peanut Banana Bread
- 1/3 cup butter
- 2/3 cup sugar
- 1 egg
- 2 egg whites
- 1/2 tsp. lemon extract
- 1 1/4 cups mashed, ripe bananas
- 1 cup white flour
- 3/4 cup whole wheat flour
- 2 1/2 tsps. baking powder
- 1/4 tsp. salt
- 3/4 cup coarsely chopped, unsalted, dry- roasted peanuts
In a large bowl, cream together butter and sugar with a mixer. Add eggs, lemon extract and bananas. Mix well. Sift together flours, baking powder and salt. Gradually add to banana mixture. Fold in peanuts. Pour into a greased 8 1/2-inch by 4 1/2-inch loaf pan. Bake in a 350 degree oven for 1 hour or until done. Courtesy of the Peanut Advisory Board.
